Everything is just hung on spikes along the walls. We need some organization in the form of proper storage. The ceiling tiles fell off last Christmas. We'd like to paint 4X8' sheets of chip board, or drywall the ceiling.

Nice garage!
If you’re planning on sprucing it up a little and adding some storage, here’s what I’d do…
Forget about the OSB (oriented strand board / chipboard) – I’m assuming that you have living space above and around the garage, in which case you’re required by code to have a gasproof finish in the garage to prevent exhaust fumes from getting into the house. If you’ve got living space above the garage, your vapour barrier is on the wrong side of the insulation (vapour barrier should always be on the warm side of the insulation!).
Determine how many sheets of drywall you’ll need – go with the longest lengths you can to minimize joints – and order yourself a load for delivery. While you’re at it, pick up a bucket of 1 5/8” drywall screws, a drywall gun or screw gun with a dimpler to set the screws to the proper depth. You’ll also need a measuring tape, ‘T’ square, and a sharp utility knife for cutting the drywall. When you have the drywall installed, grab yourself a couple of buckets, a few bags of sandable 90 compound for the first coat, self adhesive mesh tape for the flat joints, paper tape for the corners, and a few boxes of light drywall compound for the finishing coats. You’ll also need sanding sponges, dust masks, safety glasses, and a LOT of patience!
